Món cuốn diếp chay được làm từ lá rau diếp hay còn gọi là rau cải bẹ xanh cuốn với nhân gồm bún, đậu hủ, nấm mèo cùng rau củ thanh mát là một món ăn bổ dưỡng và thanh đạm, rất tốt cho sức khỏe. Nếu đã "ngán" với các món chiên dầu mỡ thì thêm vào thực đơn nhà mình món chay thanh tịnh này cho gia đình mình nhé.
Xào nhân: Hành boa rô băm nhỏ cho vào chảo nóng với một ít dầu ăn rồi đảo đều cho thơm. Lần lượt cho 50gr nấm linh chi, nấm mèo và đậu hủ chiên cắt sợi vào xào chín rồi để nguội.
Làm nước sốt chấm: Điểm nhấn chính của món ăn này là nước sốt được làm từ tương bần - một đặc sản nổi tiếng của vùng Bắc Bộ. Vì tương có vị khá mặn nên tùy vào số lượng người ăn trong gia đình mà ta điều chỉnh liều lượng cho phù hợp. Bắc chảo nóng, cho vào chảo nóng 50gr nấm rơm đảo đều cho chín, tiếp đến cho vào khoảng 4 muỗng canh tương bần, 3 muỗng canh nước, 1 muỗng canh bơ đậu phộng, 60gr đường và 1 muỗng canh mè trắng đã rang. Đảo đều đến khi sôi rồi tắt bếp để nguội.
Cuốn nhân với diếp: Trải lá diếp (cải bẹ xanh) ra, mặt lá nhẵn lật xuống dưới, mặt răng cưa để lên trên. Cho một ít bún kèm nhân và đồ chua vào giữa lá, cuộn lại và cột định hình bằng cọng bông hẹ đã trụng sơ, sau đó cắt 2 đầu để cuốn diếp được đều và đẹp mắt hơn.
Cuốn diếp chay được làm từ các nguyên liệu thiên nhiên rất tươi ngon, thanh đạm. Bạn nên làm món ăn này trong bữa ăn chay của gia đình, hoặc nếu không ăn chay thì bạn cũng nên làm món này trong bữa cơm để cân bằng lại cơ thể khi ăn quá nhiều thịt cá sẽ không tốt cho sức khỏe. Món ăn này sẽ bổ sung thêm sự đa dạng trong thực đơn gia đình bạn, cùng thực hiện ngay thôi.
